Guacamole Shrub
Ingredients
45-55 Coriander Seeds
5 Limes
8 Tomatillos
5 Avocados
Handful of Cilantro (35 leaves)
2 Cups of Sugar
.25 oz of Salt
2 Jalapenos
Blender
500 ml of Apple Cider Vinegar
100 ml of fresh lime juice
Kitchen Spoon
Large Glass Container (5 cups)
Day 1
Mortar and Pestle coriander seeds
Add crushed coriander to two cups of sugar
Zest 3 limes into the sugar and mix together
Add 30-40 cilantro leaves
Using a kitchen spoon mix ingredients until the sugar becomes dense
Add in 8 tomatillos sliced into smaller segments
Add .25 oz of salt and mix together well
Let sit for 3 days
Day 4
Take 5 avocados and peel the skin off to get all of the avocado. Make sure they are ripe and not brown at all. Pit the avocados and add to mixture. Stir with kitchen spoon.
Add the juice of the 3 limes from day one.
Add 2 cups of water to mixture.
Add 2 jalapenos, seeded and diced.
Blend to a fully diluted liquid
Add in the apple cider vinegar, 250 ml at a time, while stirring constantly. Taste to see if full 250 ml is needed.
If needed after tasting add 100 ml of fresh lime juice to the mixture while stirring constantly.
Shelf life is roughly 21 days without any issue. Adding citric acid can help add stability to the shelf life if needed…
