Hemingway Cordial

Ingredients

  • 4 large Ruby Red grapefruits home grown or untreated

  • 4 cups alcohol 95% or 151 proof grain alcohol - We prefer to use over proof rum!

  • 4 cups water

  • 1 ½ cups sugar

  • 2 cups ‘filthy cherry juice’

  • Large mason jar

  • cheesecloth or fine strainer

  • medium large pot

Recipe

  • Peel the grapefruits, removing as much of the pith as possible. To avoid a bitter liqueur.

  • Put the grapefruit peels in a jar with 3 cups of the alcohol. Close it and keep it in a cool, dark place for 10 days to a maximum of 30 days.

  • Wait until the peels have aged in the liquor enough and the liquid is yellow in color before moving to the next stage. Start by adding the sugar and cherry syrup in a pot with the water and boil it until the sugar has dissolved. Let it cool down completely.

  • Add this sugar syrup to the grapefruit peel and alcohol mixture.

  • Add the remaining 1 cup of alcohol. Mix for 2-4 minutes and close the jar tightly. Keep it in a cool, dark place for 7 days to a maximum of 30 days.

  • Filter it through a super bag and bottle it!

Stirred Hemingway Daiquiri

1.75 oz Light Rum

.75 oz Don’t Get Wasted Hemingway Liqueur

.25 oz Luxardo Maraschino Liqueur

3 grapefruit peels

Add ingredients to mixing glass or yari. Add ice and stir until glass is frosted. Julep strain the liquid into a martini or coupe glass. Garnish with luxardo cherry.
