Bananas Foster Liqueur
According to a 2017 Karlstad University study bananas are among the top 7 most wasted produce. It was actually the most wasted out of all 7. The produce that made up the 7 were bananas, apples, tomatoes, lettuce, sweet peppers, pears and grapes.

Ingredients
2 bananas peeled (peels set aside for later use, not discarded)
4 cups of overproof rum (151 or higher)
3 cups water
1 cup of coconut water
1 ½ cups brown sugar
1/4 cup of pecans (finely ground in spice grinder or vitamix)
1 tbsp cinnamon
1 tbsp vanilla extract
Instructions
Peel the bananas, setting aside the peels to make a banana peel oleo later, and slice the bananas into 1/4 inch pieces
Combine cinnamon, vanilla extract, pecans and sugar to the spice grinder for a fine consistency. Add 2 cups of water to a pot and bring to low boil. Add ingredients from spice grinder into the pot and only keep on heat until ingredients dissolve.
Put the banana slices in a jar with 4 cups of 151 proof rum with the 2 cups of syrup remaining from previous step. lightly mix the rum and syrup before combining with bananas to avoid bruising the slices.
Allow the bananas to macerate for 48 hours in the mixture. Strain out the slices. If you want a boozy treat take the slices that have been macerating and blend them up. Add them to ice trays and then you have some rum and banana ice cubes to add to your next cocktail! Add the final 1 cup of coconut water to the mixture and mix.
Bottle and don’t forget a label! NEVER FORGET A LABEL! The bottle will be shelf stable with an average alcohol content of 40% when the recipe is followed correctly.
